‘Mise en place, kitchen pre-production versus audiovisual pre-production’: A talk for all tastes

One of the talks for this 29th of September has already been confirmed. Have the fork and knife ready for ‘Mise en Place, Kitchen Pre-Production Versus Audiovisual Pre-Production’.

A talk where there will take place a discussion about the similarities and differences between the gastronomic production and the audiovisual production.

Just like the title says, the ‘mise en place’ refers to the necessary organisation required by a chef , prior to the cooking of a menu, anticipating all the ingredients that they will need to make it.

But, who will be in charge of setting the table? In honour of our season to value ourselves this will be a task for two renowned chefs: Borja Beneyto ‘Matose’ and María José Martínez. Although there are still names to be confirmed, these are the first experts to be joining us.

Borja Beneyto, also known as ‘Matose’, is a gastronomic journalist, member of the Real Academia Gastronómica and Co-Founder of Brandelicious, an agency specialised in gastronomy, agri-food and hospitality. His position is a result of his success and career in the culinary world, being one of the best restaurant trackers in the country.

Respecting María José Martínez, she is the owner and Head Chef of the restaurant Lienzo. A project that stands out for its values and that has been awarded a Michelín Star, for its proximity cooking, characterised by the use of local products and where natural elements, such as honey, hold an important place.

This encounter between food and the advertising industry will be moderated by Néstor Costarreda, Postproduction Manager of HARRY. In 1997, he started his career as Wind Productions’ Post-production Director. Soon after, he would become an associate member and one of the company’s most important assets thanks to his creative character and his excellent control of technology.

He believes that, just like in the kitchen (another of his passions), good ingredients must be mixed  in the correct order. This is the reason why he usually works as film editor for the Directors in HARRY. He is also a VFX supervisor with extensive experience in the composition and integration of CGI images; a very valuable adviser before, during and after the filming process. He knows how to identify the best and more creative professionals for each project, creating high-quality crews.
